I am pretty sure you can. But you will have to create a new CP (based on the I beam) and add an offset modifier to the height of the bottom part. Then add a node to the beam and select that CP with custom start/end dimensions. Like this:

Like this, I think.
You make a modifier which links the top from the bottom plate to the plate in the middle, then you link the most bottom plate to a node of it's top. This way it automatically moves up, if you use the "height" modifier in 3d.

Sure. Here is the CP I created based on an IPE240 Steel profile.
Note that I added an Offset modifier to control the bottom part of the profile.
Then you add it to a segmented beam with tapered size.
Finally, in 3d you select the beam, with edit mode, and stretch the offset modifier to match the mid section of the beam.

This works for me in AC23 b5005 INT.
Yes, it is true that if you set the Structure of the Beam to "Rectangular" or "Circular", the Label displays "#Complex Profile" like it is shown on your screenshot. This is correct since in such cases, the "Complex Profile" setting does not apply.
However, if you set the Structure of the Beam to "Complex Profile" then the Label correctly displays the name of the Complex Profile.

Well, this is odd! It does not work for me.

If I put a label on a beam with complex profile and no custom endings, it shows fine. The moment I change the endings, with the one I created, the label immediately changes to "Complex profile"
